Ethiopia's berry-bomb side, in jam-jar form.

This Guji was processed using the Supernatural method, a process EDN Ethiopian Coffee uses at its Chelchele site, and it's a first for our lineup. It starts as a classic natural, with whole, ripe cherries dried in the sun with the fruit still on. The difference comes first: before drying, the cherries soak in cold water for 24 hours. That short, controlled fermentation builds sweetness and keeps the fruit tasting clean. After that they dry slowly on raised beds for three to four weeks. The coffee comes from smallholder farmers in the Buku Sayasa community of Hambela, Guji, at 1,900 to 2,300 meters. In the cup it's jammy, bright, and fun to drink, and pour-over really lets it shine.
