Micro Lot #39 is a small production release from Finca Chambaku, the Restrepo family’s 12-hectare farm perched in the volcanic terrain of Caldas, Colombia. Grown at 1,550 meters in the steep ridgelines of Villamaría, this coffee is the result of intentional cultivation, a refined post-harvest process, and a biodynamic, proprietary fermentation technique.
Each cherry is hand-harvested for ripeness using Brix measurement, then sealed in a bioreactor for 183 hours of anaerobic fermentation with “Lactic-K,” a culture of water kefir developed on-site. The result is a strikingly clean natural process coffee—layered and persistent—with notes of raisin, sweet herbs, and tropical fruit, finishing long and resonant.

In an effort to provide the freshest coffee possible with the lowest amount of waste, all coffee orders will be roasted at the beginning of the week and shipped out within two business days of roast.
